This traditional yet smaller sized fresh artisanal soft creamy stretched-curd cheese, made in Puglia since 1957, has an outer shell filled with stracciatella ~ an incredibly luscious mix of mozzarella and cream, which is then smoked to produce a firmer intensely flavourful fresh cheese. As one would the classic, plate as is & top with verdant green extra virgin olive oil, fresh basil leaves, sea salt & cracked black pepper or tear atop bruschetta, into ciabatta, onto pizza or a charcuterie plate, and of course, this one is also divine with pasta.
