This fresh artisanal soft creamy stretched-curd cheese, made in Puglia since 1957, has an outer shell filled with stracciatella ~ an incredibly luscious mix of mozzarella and cream. Plate as is & top with verdant green extra virgin olive oil, fresh basil leaves, sea salt & cracked black pepper or tear atop bruschetta, into ciabatta, onto pizza or a charcuterie plate, and of course, it is divine with pasta.
