Tarta de Santiago for Thanksgiving

This traditional gluten free sweet Spanish almond cake is rich and velvety yet sumptuously light, so incredibly good. Think of M's famous amaretti but as a cake! Simply one of the loveliest desserts for your Thanksgiving table, and a wonderfully light alternative to the classic pumpkin pie. Serve with fresh berries & whipped cream or tangy creme fraiche with lemon zest.
